How It’s Made: Ice Cream Sandwiches

Ice cream sandwiches are one of the most popular desserts, but have you ever wondered about the process of making one? It starts by making the ice cream: they put in fresh cream, powdered skim milk, sugar, corn syrup, stabilizers to prevent the ice cream from crystallizing, and emulsifiers to help bond the liquid with air. The liquid gets transferred to get pasteurized in order to activate the stabilizers. Then it is cooled down and whipped. The reason ice cream is solid and not a liquid form is because when the liquid is whipped the emulsifiers in the texture bonds with the air changing its shape!

The ice cream then gets moved to an injection pipe assembly line to put the ice cream perfectly in between the wafers and moved along for packaging. They can make about 140 sandwiches per minute!
